Cast-Iron Grill Pan

I love the shape of this Cast-iron pan.  It’s the perfect piece to complete my personal collection of cast iron everything!  You’ll notice when you visit this link that there was a reviewer who whined about how terrible the pan was.  I’m guessing that it’s someone who’s never cooked with cast iron before ;-)

The Lodge 10.5 inch square grill pan is just $20.  Lodge also makes a couple of round grill pans that are linked at the bottom of the page.

    Cast iron pans can be great, but call for a lot of maintenance to keep them in peak operating form.

    I never wash my cast iron pans. The best way to clean them is to add 2-3 Tbsp of kosher salt to the bottom of the cooled pan. Using a paper towel, wipe the pan, using the salt as an absorbent and abrasive.

    Cast iron pans can rust and exfoliate (break in sheets). Keeping a thin layer of oil on the pan will keep it shiny and develop a non-stick surface.

    Thanks for the tips, but I disagree that they take “a lot of maintenance”. The simple steps to clean them and occasional oiling is not particularly burdensome :-)
