
I’m in a play right now that requires a lot of baked goods, and I volunteered to provide the show’s tortes. First step: Figure out what a torte is. Second step: Find a suitable torte recipe. It turns out tortes—multilayered cakes usually filled with rich buttercream, mousse, jam or fruit—come in a lot of different varieties. But most of them are more Paula Deen than … well, anything I’d want to put in my mouth. With a little digging, however, I came across these seven alternative torte recipes. All of these recipes keep things vegan, raw, gluten-free or otherwise a bit healthier than your typical sugar, butter and heavy cream concoctions. But a warning: Do not click through this gallery if you don’t want your mouth watering.
