    Good point Jason, and I *know* that! I mostly use cast iron skillets, and they take forever and a day to get hot, but they stay hot forever too. Thanks for the correction :-)

    Actually, cast iron takes the longest to heat up compared to any other metal used for cooking. But yes, it also retains heat the longest.
