This is a simple seafood stir-fry using a bag of frozen shrimp. The $5 bag from Wal-Mart.
INGREDIENTS :
- 1 pack frozen shrimp
- medium onion, finely chopped
- 3 cloves of garlic, finely chopped
- thumb-size ginger, peeled and finely chopped
- a bag of fresh spinach leaves
- 1 medium zucchini, sliced in flat rounds
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- olive oil for stir-frying (2-3 tbsp)
In a wok or a non-stick pan, heat up the olive oil. Add the garlic, onions, and ginger. Cook for about 2 minutes or less. Add the frozen shrimp then cover. Don’t worry if they’re frozen. They will thaw while cooking and the ice from ‘em would serve as it’s own liquid. If it dries up, just add a little bit of water.
Midway into cooking, add soy sauce, and hoisin sauce. Stir everything together then add the zucchini. Cook that for a bit, then add the spinach. Stir and cover. Once that spinach are wilted, then you can turn the heat off.
Serve with cooked white rice.
