Maple Syrup: Warm Canadian Winter Means Sweet Spring Crop

The Olympics are over, but our eyes are still on the North country. Well, actually, our stomachs are. It’s maple harvesting season, and the Vancouver Sun reports that Canada is expecting especially good harvests this year thanks to the warm weather that cursed Olympians this winter. It’s a bummer those skiers had to scrape down slopes covered in man-made snow, but we’re glad to have abundant supply for some of our favorite (healthy) maple recipes, below:

    Maple syrup is so expensive where we live (South Korea), that my husband decided we should just settle for cake syrup – boo! I’m about to go back to work after two years at home with my son, and when I get my first pay check I’m gonna go right out and buy maple syrup to celebrate! Roll on spring!
