
I actually made these White Chocolate Chip Cranberry Cookies for my kids to give to their teachers for Valentine’s Day last month but forgot to write about it! Better late than never on these, though, trust me!
I found the recipe at Sweet Sista’s blog. All the ingredients are easy enough to find, and though I did use the suggested chopped pecans I think these would taste amazing with macadamia nuts as well!
White Chocolate Chip Craisin Cookies
3 c flour
1 tsp soda
3/4 tsp salt
1 c unsalted butter
1 c brown sugar
3/4 c sugar
2 eggs
1 Tbls vanilla
1c crasins
1 1/2 c white chocolate chips
1 c pecans, chopped
Preheat oven to 350F and line baking sheets with parchment paper. Cream butter and sugars until fluffy. Beat in the eggs and vanilla.
In a separate bowl, combine the flour, baking soda, and salt. Slowly add the flour mixture to the cream mixture and stir until almost incorporated. Add the Craisins, white chocolate, and pecans. Mix until everything is just together.
Roll into heaping spoonfuls and bake at 350 F. Bake for 11-15 minutes.


I’ve baked these Craisin cookies for years – but found that biting into a white-chocolate chip was a little too sweet for me – So, I melt the chips and “drizzle” over the cookies when they come out of the oven – Gives them a “festive” look – and actually distributes the white chocolate with each bite – Make multiple batches for the Holidays – they freeze great!

Even though many chocophiles snub their nose at white chocolate, I love it and use it in many recipes. I combine orange flavored cranberries, orange zest, a splash of Grand Marnier and then mix it in with “real” white chocolate chips or chunks (the ones made with cocoa butter, not hydrogenated anything) toasted/glazed pecan bits, and the other ingredients which form the base of my standard sugar cookie recipe. People crave them

Also good with dried blueberries.
Also good with dried natural banana bits (Trader Joe’s ‘just bananas’) but they are a pain to cut up in to tiny pieces.
I’ve been looking for something to do with some white chocolate before it goes bad. These sound perfect. I’ll just chop the white chocolate into chunks. Thanks Heather!
