Savoring summer's sweetness while it lasts

When you’re lucky enough to have someone close to you go berry picking, you suddenly have to figure out what to do with that abundance… besides sitting at the kitchen counter, eating fresh berries til you groan.

rnc085.jpgAn online friend of mine pointed out this recipe for Raspberry Buckle from Martha Stewart a while ago; this past week, I lucked into enough raspberries to make it.

The recipe is simple and fast, especially if you have a stand up mixer. I hauled out my grandmother’s old stand mixer and whipped up a delicious raspberry buckle for dessert with the King of Everything. He asked for seconds. I’m thinking it’s going to be breakfast tomorrow, served in a bowl with milk. It felt good to be in the kitchen again, and my busy mind is already wondering if I can cut the sugar in half and use a quarter cup of frozen orange juice concentrate for sweetness. Hrm. Single mothers want to know…

    You might be right… my concern is with the recipe itself, I don’t know if the proportion of butter to sugar will affect the creaming step, you know? But I’ve got some frozen blueberries in the fridge, i might use them for an experiment.

    You could probably just cut the sugar in half and not replace it with anything!
